Tens of millions of receptors in the nose are each connected to the brain by nerves.
When an odour molecule contacts the right receptor,
an impulse is sent to the brain which identifies the odour
as something which may be pleasant or objectionable.
By adding a stronger, more pleasant fragrance, one can mask the odour and reodourize the space. While this is fine
in circumstances where bad odours are temporary, like in your home of small offices, it has limitations in more permanent applications.
Odour counteractants on the other hand, have the effect of matching the bad
odour molecule with another "counteracting" molecule which physically changes and neutralizes the actual bad odour molecule thereby effectively eliminating the message which the nose was sending to the brain.
